Hauzki’s Sharpening Method
We sharpen kitchen knives mainly by freehand with Japanese natural and synthetic whetstones (aka waterstone).
We believe this is the best way for a lot of our customers because:
1. it gives a very fine cutting edge.
2. sharp edge retains longer than by any other methods. We choose appropriate types of whetstones and abrasives for individual knives.
3. it does not risk adversely changing the original hardness from overheating the very delicate and fine cutting edge.
4. it removes a minimal amount of steel, so that the knife life is longer.
At the end of sharpening, we always conduct our knife performance test. In our test, we test cut paper as well as food when possible and assess overall knife performance.
